Resumo
Goat milk is a high nutritional value food, of easy digestion, being also recommended
for individuals presenting allergy to cow milk protein. In other to provide the consumer
a good product, it is necessary to control the milk quality in terms of physicochemical
and microbiological analysis and somatic cells counts. The objective of this work was
to study goat milk production and to establish factors that influence its quality, using
physicochemical and bacteriological analysis and somatic cells counting and through
the comparison between the traditional and electronic methodology of the analyses
of fat, protein, lactose, total dry extract, density, acidity and cryoscopic index;
analyses of counting heterotrofic aerobic mesophilic and psycrotrophic bacteria; and
somatic cells counting. The results show that electronic analysis methods when
compared with traditional methods are advantageous and practical. However, it is
important a specific standardization to use in goat milk. The physicochemical results
had indicated that milk produced in the region of Nova Friburgo-RJ was in agreement
with the legislation. The microbiological contamination index indicated possible
problems of hygiene of milk. The development of goat dairy farm good agricultural
practical is suggested.
